The estate
In 1855, Edmond de Ayala traveled to Champagne and, in 1860 with his wife, founded the Maison de Champagne Ayala. Remaining family-owned, the Ayala estate places passion and quality at the heart of its ambitions, striving to craft champagnes that are pure, elegant, and refined. Ayala's cuvées are best enjoyed naturally, with minimal dosage. Ayala was the official supplier to the English Crown. In 2005, Ayala was acquired by the family-owned company Jacques Bollinger.
The wine
This new blend of chardonnays, composed entirely of Grands and Premiers Crus from Champagne, reveals the purity of the chalky soils of the Côte des Blancs and the Montagne de Reims, while highlighting the uniqueness of the 2018 harvest. This inaugural A/18 production paves the way for future interpretations that will allow this cuvée to reinvent itself with each new edition.
Vinification and aging
This champagne is crafted following micro-vinification by parcel in small stainless steel vats. It is aged for 6 years between harvest and release. The dosage of this Blanc de Blancs is 5g/L.
