Tasting
Color
The color presents a pale gold tone with bright green nuances, underscored by a fine and persistent perlage that forms an elegant crown.
Nose
The bouquet reveals a floral delicacy of acacia blossom, hawthorn, and lime flower, evolving towards indulgent notes of brioche, toasted almonds, and acacia honey, complemented by hints of lemon and grapefruit.
Palate
The attack is lively and taut, carried by the chalky signature typical of the terroir. The silky texture reveals an elegant richness with aromas of candied citrus fruits and fresh hazelnuts, accentuated by a saline note. The mineral and refreshing finish offers a beautiful length.
Food and wine pairing
This Champagne pairs perfectly with seafood, particularly oysters, langoustines, and scallop carpaccio. It also elegantly accompanies a white fish ceviche or fresh, creamy cheeses such as Chèvre cendré or Brillat-Savarin.

The Producer
Founded in 1834 in Épernay by Auguste Boizel and Julie Martin, the Maison de Champagne Boizel continues its family legacy under the leadership of Florent and Lionel Roques-Boizel, now in its sixth generation. This independent Champagne house sources its grapes from classified vineyards, particularly the Grands Crus of Cumières and Aÿ. A pioneer in Blanc de Blancs since 1929, Boizel combines traditional craftsmanship with modern techniques to create exceptional Champagnes.
The Vineyard
The village of Villers-Marmery sits on the eastern flank of the Montagne de Reims, benefiting from an easterly aspect on pure chalk soils. The vines thrive at altitudes of 140 to 180 metres on this 246-hectare Premier Cru terroir of Champagne, offering ideal conditions for the expression of Chardonnay.
Winemaking and aging
This Blanc de Blancs is vinified entirely in stainless steel tanks to preserve the aromatic purity of the Chardonnay. The aging on the lees lasts five years, developing the complexity and finesse of this exceptional single-vineyard Champagne. This Champagne has a dosage of 3.5 g/l, giving it a pure and mineral expression.
