An exceptional champagne with scents of mirabelle plums and dried fig

The estate

Nicknamed “Boll” by those from Champagne and “Bolly” by the English, the timeless and legendary Bollinger Champagne House forms part of a small circle of three great Champagne houses. Bollinger champagne’s style is defined through its remarkable precision, which is brought to every moment of production. With a respect for tradition, riddling done by hand, natural corks for magnum reserve bottles and the last permanent cooper in the region, excellence has symbolised Bollinger champagne culture since its creation in Aÿ. More than just an art, it is a heritage.

The vineyard

The strength of the Bollinger Champagne House lies in its vineyards. 174 hectares of vines divided into seven main vineyards, 85% of which are Grands Crus and Premiers Crus, making Bollinger one of the few Champagne houses to produce its own grapes for its blends.

The wine

Bollinger Grande Année Rosé 2007 was made from 14 Champagne crus, mostly from Aÿ and Verzenay for the Pinot Noir and Cramant and Oger for the Chardonnay.

Winemaking and ageing

Bollinger Grande Année Rosé 2007 was fermented exclusively in barrels. The ageing time was twice as long as that indicated in the appellation's charter, with maturation under cork. This Bollinger Rosé champagne was dosed at 7 grams per litre.

Blend

Pinot Noir (72 %)
Chardonnay (28 %).
This blend was finished with 6 % red wine from Côte aux Enfants.

Tasting

Grande Année Rosé 2007 reveals delicate colours with coral highlights.

Nose
The nose mingles redcurrant and dried fig notes underlined by a menthol touch. The complex bouquet also gives off blonde tobacco and dried flower scents.

Palate
Grande Année Rosé 2007 expresses itself with finesse. Notes of mirabelle plum and kirsch combine with scents of cut hay on a structured palate.








To serve

To fully enjoy all its aromatic bouquet, it is recommended to serve Grande Année Rosé 2007 at a temperature between 8 and 10°C inclusive.

Food and wine pairing

Bollinger Grande Année Rosé 2007 pairs with fine meat dishes, like duck breast, quail, venison in wine sauce or pigeon. Exotic and oriental cuisine can also be paired with this exceptional champagne. A rhubarb and red fruit crumble would be the perfect dessert to accompany Grande Année Rosé 2007.
