The producer
Established for nearly five centuries in Mareuil-sur-Aÿ, the Philipponnat Champagne House is one of the historic names in the Champagne region. Singularity, excellence, generosity and simplicity are the values that guide this house, which has remained a family-owned business. Owned by the house since 1935, the mythical Clos des Goisses is one of the oldest and most prestigious plots in the Champagne region. This utter gem is the source of rare and exceptionally powerful champagnes.
The Philipponnat Champagne house reigns over an exceptional 20-hectare vineyard composed of Premiers and Grands Crus in Aÿ, Mareuil-sur-Aÿ and Avenay.
The wine
The Cuvée Royale Réserve pays tribute to the ancestors of the Philipponnat family: vineyard owners, winemakers, suppliers to King Louis XIV, magistrates and royal mayors of Ay. This cuvée offers a beautiful balance between structure in the mouth, length and vinosity.
Vinification and ageing
This cuvée is vinified in the traditional manner, avoiding any premature oxidation. A partial malolactic fermentation precedes ageing in reserve wine barrels to develop the complexity of the aromas. This champagne is aged for three years and the dosage is 8 g/litre.
The blend
This Cuvée Royale Réserve Brut by Philipponnat comprises a blend of Pinot Noir (65%), Chardonnay (30%) and Pinot Meunier (5%). The first press is composed in majority of Grands and Premiers Crus. 20 to 30% of reserve wines vinified using the Solera method and aged in oak complete the blend.

The tasting
Colour
Intense, the colour is golden with amber reflections. The effervescence is delicate and persistent.
Nose
The first nose gives off fragrances of vine flowers, lime blossom and fresh, slightly toasted bread. The bouquet becomes more complex with aeration, with notes of red fruit, citrus and honey.
Palate
A beautiful attack precedes a fruity mouth (redcurrant, raspberry, ripe grape), ample, structured and persistent. The finish seduces with its delicious notes of biscuit and freshly baked bread.
Food and wine pairing
Ideal as an aperitif, this Cuvée Royale Réserve Brut by Philipponnat also goes well with white meats, poultry, fine charcuterie, fish and seafood.

For an optimal tasting experience, serve at 8°C.
Cellaring
This champagne can be kept in the cellar for five years to develop its aromatic complexity.
