The producer

Ruinart was the first Champagne House to be founded in 1729, and is an essential reference. The historical Ruinart Champagne House owes its birth to the visionary and precursor monk Dom Thierry Ruinart. Located in the heart of Reims, the Ruinart House watches over a treasure. Unique, historical monument and architectural prowess, the Ruinart Crayères have been classified as a historic site since 1931 and included on the UNESCO World Heritage List since July 2015. Nearly 40 metres underground, in the darkness and coolness of the cathedral-like cellars, the precious bottles wait to be brought to light. Elegance, style and timelessness define the Ruinart Champagne House’s DNA, which is one of the most appreciated brands in France, embodying the excellence of French Art de Vivre all over the world.

The wine

Created in 1959, the exceptional Dom Ruinart cuvée is reserved for excellent Champagne vintages. Composed only of grapes from grand crus, these champagnes crown the best harvests. It is only after a long ten year blooming period in the Ruinart Crayères that these prestigious cases can reveal all their aromatic complexity.

The vintage

The 2007 vintage is a great year in the Champagne region. This complex year gave birth to great quality Chardonnays thanks to a mild winter which favoured an early flowering from the second half of May. The sunshine and warmth of the summer allowed the grapes to reach perfect ripeness so that the harvest could begin at the end of August and last until early September.

The blend

Dom Ruinart Rosé 2007 is made from a blend of 80% Chardonnay from the Côte de Blancs (Avize, Le Mesnil-sur-Oger, Oger, Chouilly) and the Montagne de Reims (Sillery, Verzenay) and 20% Pinot Noir vinified as red wine, from the unique Grand Cru of Aÿ

The tasting

Nose

The Dom Ruinart Rosé 2007 wine is full of character. The warm and sunny aromas of roasted coffee and cocoa beans mingled with sweeter notes. The aromas of sweet apples and ripe citrus fruits bring a sweet and fresh side balancing out the powerful roasted notes.

Palate

On the palate, the attack is straight-forward. It gives way to aromas of quetsche and hibiscus, echoing the citrus fruits of the nose. Dom Ruinart Rosé 2007 has an exquisitely fresh finish with a sappy profile. A great champagne for gourmets, still promising to evolve well with age.

Service

For optimal tasting, serve between 11 and 13°C in large tasting glasses.

Food and wine pairing

This Dom Ruinart Rosé 2007 goes well with fish (salmon tataki, marinated tuna) and meat (Bresse poultry, veal). As it evolves over time, this exceptional champagne will be the ideal partner for more spicy and intense ingredients.
