The estate
Witness to an extraordinary historical heritage, Domaine Laroche is one of the essential references in Chablis, Burgundy. The Domaine Laroche buildings are located in the heart of old Chablis. From 867, the arrival of the abbots of Saint-Martin de Tours in Chablis marked the beginning of the vineyard’s growth. Saint-Martin’s relics are kept in Domaine Laroche’s Obédiencerie, where the estate’s ageing cellars can now be found. The Obédiencerie in Chablis became a major player in the wine industry in the 15th and 17th centuries thanks to the construction of a renowned vineyard. The reputation of the wines by the monks at the Obédiencerie would come to establish the celebrity of Chablis wines.
The vineyard
Domaine Laroche owns 90 hectares of vines, solely made up of Premier Crus and Grand Crus. The vines are managed in agro-ecological viticulture while following a global environmental approach. The use of chemical input is prohibited and natural herbal treatments are used. The Chablis Premier Cru Les Fourchaumes is made from old vines planted on a south- and west-facing hillside, which provides protection against northern winds. Domaine Laroche owns 3.11 hectares of this Premier Cru, which has a total of 132.88 hectares and vines aged by 65 years on average. This vineyard is one of the most beautiful in Domaine Laroche.
The wine
The Chablis Premier Cru Les Fourchaumes Vieilles Vignes by Domaine Laroche is the most prestigious of the Premier Crus in Chablis. Made from a 2.44-hectare terroir, which 70-year-old vines are planted on a hillside facing south and west, this great white Burgundy wines distinguishes itself through its elegance and classy style, with a minerality that is specific to Chablis. This cuvée is certified Vegan and High Environmental Value Level 3.
The vintage
The mildness of autumn and winter encouraged quick vine development. Summer, which was marked by dry conditions and high temperatures, allowed for a flowering that was 8 days earlier than the year before.
Vinification and ageing
Once the manual harvests are carried out, the grapes are sorted before entering the cellar. Fermentation occurs in oak barrels and stainless steel vats, as does ageing. After blending, an additional ageing of around 8 months on fine lees is carried out.
