Description

A full and expressive Chablis Grand Cru wine

The estate

Founded in 1959, the William Fèvre estate has become over the vintages a benchmark name among Chablis wines. This illustrious Burgundy estate entered the fold of the Henriot group in 1998.

Domaine William Fèvre oversees an exceptional 78 hectares of vines, including 15.9 hectares classified as Burgundy Premier Cru and 15.2 as Grand Cru. Certified HVE (High Environmental Value) since 2015, this vineyard, through its mosaic of more than 90 distinct plots, brings out all the richness and diversity of the Chablis terroir.

The vineyard

"Les Clos" Domaine de William Fèvre is the largest and most famous of the Grands Crus, and is the historical cradle of Chablis wines. It comes from a vineyard of 4.11 hectares located on the heights of the appellation. The terroir, facing south, with a soil composed of very white, dense and deep clays, rests on a limestone compression located at 80 centimetres which gives the wine typical spicy notes.

Winemaking and ageing

Harvested by hand, the grapes are vatted by gravity. A short pneumatic pressing is followed by a light static settling. Alcoholic and malolactic fermentations are carried out for 50 to 70% of the must in French oak barrels aged 6 years on average, and in small stainless steel vats for the remainder of the yield. The wine is aged for 14 to 15 months, including 5 to 6 months on fine lees, in the same containers as the fermentation.
