The estate

Founded in 1959 by William Fèvre at his first harvest, Domaine William Fèvre now spans 70 hectares in the heart of Chablis, in Burgundy. Acquired in January 2024 by Domaines Barons de Rothschild Lafite and managed by Didier Séguier, William Fèvre holds the largest portfolio of Chablis Grands Crus with 15 hectares—15% of the appellation—spread across the seven classified climats. An environmental pioneer, the estate has practiced biodynamics since 2010 on its Premiers and Grands Crus.

The vineyard

The Chablis Grand Cru Les Clos covers an area of 4.11 hectares, representing 16% of the total appellation. Located on the heights of the Côte des Grands Crus, in the south of the appellation, the vineyard benefits from a due south exposure. The Kimmeridgian terroir is made up of marls and marly limestone, rocky soils and dense white clays rich in fossils, with limestone compaction 80 centimeters deep. This exceptional terroir gives the wine its structure and remarkable cellaring potential.

The vintage

The 2022 vintage in Burgundy began with a mild, dry winter, followed by late budbreak at the end of March, which helped avoid the risk of frost. Flowering took place at the end of May under favorable conditions. Harvest began on August 31, revealing grapes in perfect health, with thick skins and generous pulp delivering excellent juice yields.

Winemaking and aging

The Chablis Grand Cru "Les Clos" Domaine 2022 is crafted using gravity flow, without pumping. The grapes are pressed pneumatically over a short period of 1h30 to 2h00. Fermentation takes place in stainless-steel tanks. Aging lasts 20 months in total: 40% of the cuvée is aged in French oak barrels for 5 to 6 months on fine lees, before the entire blend completes its aging in small stainless-steel tanks.
