Description
The finesse and balance of a low-dosage Brut Champagne
The estate
Founded in Reims in 1981, Bruno Paillard is one of the youngest Champagne houses. An uncompromising selection of terroirs, the exclusive use of first pressings, blends crafted from a vast collection of reserve wines, and an aging period twice as long as required by the appellation’s specifications—all reflect Bruno Paillard's ongoing quest for excellence and the desire to create a “very personal style.”
The vineyard
The Bruno Paillard House carefully tends an exceptional vineyard, patiently assembled and spread over 32 hectares of vines across 15 crus, 12 of which are classified as “Grands Crus.” The vineyard brings together the great terroirs of Oger, Le Mesnil sur Oger, Cumières, Verzenay, as well as the remarkable Cru des Riceys located in the south of Champagne.
The wine
The signature cuvée of the Bruno Paillard House, “Brut Première Cuvée,” is crafted regardless of the vintage’s character, “in bountiful years as well as lean years.” Very low in dosage (6g/l), this Brut stands out for its purity and authenticity. Bruno Paillard Brut Première Cuvée Champagne is made exclusively from the purest juices from the first pressing. The blend is composed of a palette of 32 crus, each vinified separately in stainless steel vats and barrels, with a minimum of 25% reserve wines, sometimes reaching up to 48%.
Aging
The wine ages in bottles on the “lees” for at least 3 years, followed by a further 3 to 4 months of rest in the cellar after disgorgement. The disgorgement date is indicated on the back label.
Two exclusive cases
The Bruno Paillard Champagne House innovates by offering the opportunity to (re)discover its Brut Première Cuvée through two cases, each containing bottles with different disgorgement dates.
The “Ancient Disgorgements 3 Bottles” case offers 3 bottles: one disgorged very recently, and the other two disgorged 3 and 6 years ago, respectively.
The “Ancient Disgorgements 5 Bottles” case offers 6 bottles: one disgorged very recently, and the other four disgorged 3, 6, 9, and 12 years ago, respectively.
Blend
Pinot Noir (45%), Chardonnay (33%), Pinot Meunier (22%).
Characteristics and tasting advice for the Coffret Collection Anciens Dégorgements by Bruno Paillard
Tasting
Appearance
The Bruno Paillard Brut Première Cuvée reveals a bright straw gold color, enhancing the vibrancy and finesse of its bubbles.
Nose
Complex, the aromatic bouquet highlights the typicity of each grape variety in the blend. Citrus and fruit notes appear first, echoing the Chardonnay, then give way to red fruit notes reminiscent of redcurrant, raspberry, and morello cherry, indicating the strong presence of Pinot Noir. Finally, Pinot Meunier stands out with suave and exotic notes. Over time, this champagne will develop floral and spicy notes as well as toasted aromas.
Palate
From the first sip, the wine impresses with its vibrancy and minerality, recalling the chalky identity of its terroir. Flavorful and indulgent, the palate excites with citrus notes and hints of sweet almond, then moves on to red and black fruit notes. The finish is precise and lingers long on the palate.
Food & wine pairings
This Brut by Bruno Paillard can be served as an aperitif or enjoyed throughout a meal thanks to its vinous structure.
Serving
To fully appreciate the purity of this Brut Champagne, it is recommended to serve it at 9°C in a tulip-shaped stemmed glass to allow its aromas to express themselves.
