Founded by two brothers, Jules and Auguste Devaux, the Devaux Champagne House remained a family-owned estate from 1846 to 1987, the year in which this priceless heritage was passed on to the Union Auboise, which has now become the "Groupe Vinicole Champagne Devaux".
Thanks to a close partnership with more than 100 winegrowers, the Devaux Champagne House has developed over the years a unique approach in Champagne by implementing a sustainable viticultural approach throughout its vineyards. Made from exceptional vineyards, Devaux champagnes enhance two of the Champagne region’s flagship grape varieties, the Pinot Noir variety from the Côte des Bar, round and powerful, and the Chardonnay varietal from the Côte des Blancs and Montgueux, fine, elegant and fresh.
The individual cuvées, comprised within the D collection, are recognised for their purity and their authentic expression of the house's know-how.
This Cœur des Bar Blanc de Noirs by the Devaux Champagne House is made from a selection of plots in the vineyards of the Côte des Bar, which have been cultivated for nearly 20 years in an environmentally friendly manner. Some parcels are currently converting to organic farming.
Vinification and ageing
Alcoholic fermentation in thermoregulated stainless steel vats precedes malolactic fermentation. The wine is drawn off and allowed to foam for 6 to 8 weeks. Ageing for 3 years in the cellar after the harvest. Racking and disgorging for 4 to 5 weeks. Following the dosage, this champagne benefits from a minimum rest of 3 months before shipping. The dosage is 8 g/l. The expedition liqueur is made from wine aged in casks.
Made from the cuvée, i.e. the best quality of the pressed juice, this Cœur des Bar Blanc de Noirs by the Devaux Champagne House is a 100% Pinot Noir. This blend is completed by 20% reserve wines.
Intense, the colour is a brilliant gold with subtle amber highlights.
Rich and powerful, the nose reveals delicious ripe fruit fragrances.
The palate reveals a harmonious balance between fruity and honeyed notes. Ample and deep, the palate is seduced by this wine’s refined and refreshing finish.
