The estate
Founded by two brothers, Jules and Auguste Devaux, the Champagne Devaux House remained a family-owned property from 1846 until 1987, the year this invaluable heritage was passed on to the Union Auboise, now known as the "Groupe Vinicole Champagne Devaux."
The vineyard
Thanks to partnerships with more than 100 winegrowers, Champagne Devaux has developed a unique approach in Champagne over the years through sustainable viticulture across its entire vineyard. Crafted from exceptional vineyards, Devaux champagnes showcase two emblematic grape varieties of Champagne: the round and powerful pinot noir from the Côte des Bar and the fine, elegant, and fresh chardonnay from the Côte des Blancs and Montgueux.
The single-vineyard cuvées, grouped under the D Collection, are renowned for their purity and authentic expression of the house's expertise.
The wine
This Cœur des Bar Blanc de Noirs from Maison Devaux is crafted from a parcel selection within vineyards in the Côte des Bar, managed for nearly 20 years with an environmentally respectful approach. Some plots are in the process of conversion to organic farming.
Vinification and aging
Alcoholic fermentation in temperature-controlled stainless steel tanks precedes malolactic fermentation. Bottling and secondary fermentation last 6 to 8 weeks. The wine matures for 3 years in the cellar after harvest. Riddling and disgorgement take 4 to 5 weeks. After dosage, this champagne rests for at least 3 months before shipping. The dosage is 8 g/l. The liqueur d'expédition is made from wine aged in large oak casks.
Grape variety
Made from the cuvée, meaning the finest quality of pressed juice, and supplemented with 20% reserve wines, this champagne is made from 100% pinot noir.
