Devaux crafts a complex and mineral Extra Brut Champagne
The estate
Founded by the two brothers, Jules and Auguste Devaux, the Champagne Devaux House remained a family-owned property from 1846 until 1987, the year this invaluable heritage was passed on to the Union Auboise, now known as the “Groupe Vinicole Champagne Devaux.”
The vineyard
Thanks to partnerships with over 100 winegrowers, Champagne Devaux has developed over the years a unique approach in Champagne through sustainable viticulture across its entire vineyard. Crafted from exceptional vineyards, Devaux champagnes showcase two flagship grape varieties of Champagne: the round and powerful Pinot Noir from the Côte des Bar and the refined, elegant, and fresh Chardonnay from the Côte des Blancs and Montgueux.
The single-vineyard cuvées, grouped under the D Collection, are renowned for their purity and their authentic expression of the house’s expertise.
Vinification and aging
Alcoholic fermentation is carried out mainly in stainless steel vats and also in oak barrels, followed by partial malolactic fermentation. Aged for a minimum of 5 years in the cellar. Disgorgement at least 6 months before release. Dosage is 3 g/l.
Blend
Pinot Noir (55%) from the Côte des Bar and Chardonnay (45%) from the Côte des Blancs, Montgueux, and the Côte des Bar.

Appearance
