Description

Devaux crafts a rich and refined champagne, the result of highly precise single-parcel vinification

The estate

Founded in 1846 by brothers Jules and Auguste Devaux, the Champagne Devaux House remained a family-owned property from 1846 to 1987, the year this priceless heritage was entrusted to the Union Auboise, now known as the “Groupe Vinicole Champagne Devaux.”

The vineyard

Thanks to partnerships with over 100 growers, Champagne Devaux has developed a unique approach in Champagne over the years, practicing sustainable viticulture across its entire vineyard. Crafted from exceptional vineyards, Devaux champagnes showcase two flagship grape varieties of the Champagne region: the round and powerful Pinot Noir from the Côte des Bar, and the fine, elegant, and fresh Chardonnay from the Côte des Blancs and Montgueux.

The single-parcel cuvées, grouped under the D Collection, are renowned for their purity and for authentically expressing the house’s savoir-faire.

The wine

The Cuvée D from Maison Devaux is crafted from a rigorous selection of parcels, which are vinified separately.

Winemaking and aging

This champagne underwent alcoholic fermentation, carried out mainly in temperature-controlled stainless steel vats, with a portion vinified in oak. Malolactic fermentation was partially completed on the blend. Bottling and secondary fermentation, lasting 6 to 8 weeks, are followed by a minimum of 5 years of cellar aging. After disgorgement, the champagne benefits from an additional 6 months to 1 year of aging. The dosage for this cuvée is approximately 8 g/l.

Blend

Pinot Noir (55%) from the Côte des Bar and Chardonnay (45%) from the Côte des Blancs, Montgueux, and Côte des Bar. The blend is composed mainly of the heart of the cuvée, representing the highest quality juice. It is complemented by at least 35% reserve wines, most of which are aged in large oak casks.

Tasting

Appearance
The wine displays a beautiful golden color. The bubbles are fine and persistent.

Nose
The bouquet reveals fragrances of white flowers and spices, followed by delicious notes of toasted brioche and vanilla.

Palate
The palate charms with its delicate balance between refined Chardonnay and round, generous Pinot Noir. Lively and creamy, the mouth offers refreshing notes of mandarin and orange zest, leading to a persistent finish.

Food and wine pairings

Cuvée D from Maison Devaux pairs beautifully with scallops and truffles, sea bass, crispy spider crab, sweetbreads, or a crispy Thai-style fish fillet with wild rice and peas. Thanks to its aromatic richness, this champagne is also an excellent match for indulgent desserts (a chocolate and pear brownie with hazelnut pieces, a Myango chocolate mousse, or a chocolate and vanilla entremet).

Serving

For optimal enjoyment, serve at 8 to 10°C (46 to 50°F).
